Ingredients:

  • 1 pre-made pie crust
  • 1 cup granulated sugar
  • 1/4 cup cornstarch
  • 1/4 teaspoon salt
  • 1 1/2 cups water
  • 3 egg yolks, lightly beaten
  • 1/2 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 3 tablespoons unsalted butter
  • 4 egg whites
  • 1/4 teaspoon cream of tartar
  • 1/2 cup granulated sugar

Start by preheating your oven to 375°F. Place the pre-made pie crust in a 9-inch pie dish and set it aside.

In a medium-sized saucepan, whisk together 1 cup of sugar, 1/4 cup of cornstarch, and 1/4 teaspoon of salt. Gradually stir in 1 1/2 cups of water and cook over medium heat, whisking constantly, until the mixture thickens and boils. Boil for one minute, then remove from the heat.
