Delicious Veggie Spring Rolls with Sweet Chili Sauce Recipe

Ingredients:

  • 1 pack of spring roll wrappers
  • 1 cup of shredded carrots
  • 1 cup of sliced cucumber
  • 1 cup of sliced bell pepper
  • 1 cup of bean sprouts
  • 1/2 cup of chopped cilantro
  • 1/2 cup of chopped mint
  • 1/4 cup of soy sauce
  • 2 tablespoons of rice vinegar
  • 1 tablespoon of honey
  • 1 tablespoon of sesame oil
  • 1/2 teaspoon of garlic powder
  • 1/2 teaspoon of red pepper flakes
  • 1/2 cup of sweet chili sauce (for dipping)

Directions:

  1. Prepare the vegetables by slicing them into thin strips.
  2. In a small bowl, mix together the soy sauce, rice vinegar, honey, sesame oil, garlic powder, and red pepper flakes.
  3. Place a spring roll wrapper on a flat surface and fill it with a small amount of each vegetable and some cilantro and mint.
  4. Roll up the wrapper, tucking in the sides as you go.
  5. Repeat until all the vegetables are used up.
  6. Heat up a non-stick pan over medium heat.
  7. Place the spring rolls seam-side down onto the pan and cook for 2-3 minutes, or until crispy and golden brown.
  8. Serve with sweet chili sauce for dipping.

Tips:

  • Make sure not to overfill the spring rolls or they may burst open when cooking.
  • Feel free to use any vegetables you have on hand, such as shredded cabbage or sliced mushrooms.
  • If you don't like spicy food, you can skip the red pepper flakes or reduce the amount.
  • If you want to make the recipe vegan, you can substitute the honey with agave syrup or maple syrup.
