Ingredients:
- 1 pack of spring roll wrappers
- 1 cup of shredded carrots
- 1 cup of sliced cucumber
- 1 cup of sliced bell pepper
- 1 cup of bean sprouts
- 1/2 cup of chopped cilantro
- 1/2 cup of chopped mint
- 1/4 cup of soy sauce
- 2 tablespoons of rice vinegar
- 1 tablespoon of honey
- 1 tablespoon of sesame oil
- 1/2 teaspoon of garlic powder
- 1/2 teaspoon of red pepper flakes
- 1/2 cup of sweet chili sauce (for dipping)
Directions:
- Prepare the vegetables by slicing them into thin strips.
- In a small bowl, mix together the soy sauce, rice vinegar, honey, sesame oil, garlic powder, and red pepper flakes.
- Place a spring roll wrapper on a flat surface and fill it with a small amount of each vegetable and some cilantro and mint.
- Roll up the wrapper, tucking in the sides as you go.
- Repeat until all the vegetables are used up.
- Heat up a non-stick pan over medium heat.
- Place the spring rolls seam-side down onto the pan and cook for 2-3 minutes, or until crispy and golden brown.
- Serve with sweet chili sauce for dipping.
Tips:
- Make sure not to overfill the spring rolls or they may burst open when cooking.
- Feel free to use any vegetables you have on hand, such as shredded cabbage or sliced mushrooms.
