Creamy Pesto and Tomato Pasta Recipe

Ingredients:

  • 1 pound of pasta
  • 1 cup of basil pesto
  • 1/2 cup of heavy cream
  • 1/2 cup of grated Parmesan cheese
  • 1 pint of cherry tomatoes, halved
  • 3 cloves of garlic, minced
  • 2 tablespoons of olive oil
  • Salt and pepper to taste

Instructions:

  1. Bring a large pot of salted water to a boil. Add the pasta and cook until al dente, according to the package directions. Drain and set aside.
  2. While the pasta is cooking, heat the olive oil in a large skillet over medium heat. Add the garlic and cook for 1-2 minutes, or until fragrant.
  3. Add the halved cherry tomatoes to the skillet and cook for another 2-3 minutes, or until they start to soften and release their juices.
  4. Stir in the basil pesto and heavy cream, making sure to coat the tomatoes evenly. Cook for 2-3 minutes, or until the sauce is heated through.
