Ingredients:
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 zucchini, sliced
- 1 eggplant, sliced
- 1 red onion, sliced
- 2 cloves garlic, minced
- 3 tbsp olive oil
- 1 tsp dried oregano
- 1 tsp dried thyme
- 1/2 tsp salt
- 1/4 tsp black pepper
- 6 cups mixed greens
- 1/2 cup crumbled feta cheese
- 1/4 cup balsamic vinegar
Preheat your oven to 425°F. In a large mixing bowl, combine the sliced vegetables, minced garlic, olive oil, oregano, thyme, salt, and black pepper. Toss everything together until the vegetables are evenly coated with the seasoning mixture.
Arrange the seasoned vegetables in a single layer on a baking sheet. Roast them in the preheated oven for 25-30 minutes, stirring halfway through, until the vegetables are tender and slightly charred.
While the vegetables are roasting, prepare the salad dressing. In a small mixing bowl, whisk together the balsamic vinegar and 2 tbsp of olive oil. Set aside.
Once the vegetables are done roasting, remove them from the oven and let them cool for a few minutes. In a large serving bowl, arrange the mixed greens. Spoon the roasted vegetables on top of the greens, making sure to distribute them evenly. Sprinkle the crumbled feta cheese over the top of the vegetables.
Pour the balsamic dressing over the salad, using as much or as little as you prefer. Toss everything together gently until the salad is coated with the dressing.
Your roasted vegetable salad with feta is now ready to serve! Enjoy the delicious flavors and nutritious ingredients in every bite.
