  • 4 medium-sized zucchinis
  • 1 cup of rice
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 1 red bell pepper, diced
  • 1/2 cup of feta cheese, crumbled
  • 1/4 cup of fresh parsley, chopped
  • 2 tablespoons of olive oil
  • Salt and pepper to taste

Start by preheating your oven to 375°F. Cut off the tops of the zucchinis and scoop out the inside with a spoon. Place the hollowed-out zucchinis on a baking sheet and set aside.
