Delicious and Authentic Chicken Gumbo Recipe

Ingredients:

  • 1 lb. boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 lb. smoked sausage, sliced into rounds
  • 1 cup chopped onion
  • 1 cup chopped green pepper
  • 1 cup chopped celery
  • 3 cloves garlic, minced
  • 1 can (14.5 oz.) diced tomatoes, undrained
  • 1 can (15 oz.) tomato sauce
  • 4 cups chicken broth
  • 2 tsp. Cajun seasoning
  • 1 tsp. dried thyme
  • 1/2 tsp. dried oregano
  • 1/2 tsp. salt
  • 1/4 tsp. black pepper
  • 1 bay leaf
  • 1 cup uncooked white rice
  • Chopped fresh parsley, for garnish

Directions:

  1. Heat a Dutch oven or large soup pot over medium heat. Add the chicken and sausage and cook until browned, stirring occasionally. Remove the chicken and sausage with a slotted spoon and set aside.
  2. Add the onion, green pepper, celery, and garlic to the pot and cook until softened, stirring occasionally.
  3. Add the diced tomatoes, tomato sauce, chicken broth, Cajun seasoning, thyme, oregano, salt, pepper, and bay leaf to the pot. Bring the mixture to a boil, then reduce heat to low and simmer for 30 minutes.
  4. Stir in the rice and return the chicken and sausage to the pot. Simmer for an additional 20-25 minutes or until the rice is tender and the chicken is cooked through.
  5. Remove the bay leaf from the pot and discard. Serve the gumbo hot, garnished with chopped fresh parsley.

Tips:

  • For a spicier gumbo, add a pinch of cayenne pepper or some hot sauce to taste.
  • If you prefer a thicker gumbo, add a tablespoon of cornstarch mixed with a tablespoon of water to the pot during the last 10 minutes of cooking.
