Ingredients:
- 1 lb. boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 lb. smoked sausage, sliced into rounds
- 1 cup chopped onion
- 1 cup chopped green pepper
- 1 cup chopped celery
- 3 cloves garlic, minced
- 1 can (14.5 oz.) diced tomatoes, undrained
- 1 can (15 oz.) tomato sauce
- 4 cups chicken broth
- 2 tsp. Cajun seasoning
- 1 tsp. dried thyme
- 1/2 tsp. dried oregano
- 1/2 tsp. salt
- 1/4 tsp. black pepper
- 1 bay leaf
- 1 cup uncooked white rice
- Chopped fresh parsley, for garnish
Directions:
- Heat a Dutch oven or large soup pot over medium heat. Add the chicken and sausage and cook until browned, stirring occasionally. Remove the chicken and sausage with a slotted spoon and set aside.
- Add the onion, green pepper, celery, and garlic to the pot and cook until softened, stirring occasionally.
- Add the diced tomatoes, tomato sauce, chicken broth, Cajun seasoning, thyme, oregano, salt, pepper, and bay leaf to the pot. Bring the mixture to a boil, then reduce heat to low and simmer for 30 minutes.
- Stir in the rice and return the chicken and sausage to the pot. Simmer for an additional 20-25 minutes or until the rice is tender and the chicken is cooked through.
- Remove the bay leaf from the pot and discard. Serve the gumbo hot, garnished with chopped fresh parsley.
