If you're looking for a comforting bowl of soup that's perfect for cold winter nights, look no further than this celeriac and apple soup recipe. This creamy soup is packed with flavor and nutrients, making it a healthy and satisfying meal for any time of day.
Ingredients:
- 1 large celeriac, peeled and chopped
- 1 onion, chopped
- 2 garlic cloves, minced
- 2 medium apples, peeled and chopped
- 4 cups vegetable broth
- 1 cup milk
- 1/4 tsp nutmeg
- 1/4 tsp black pepper
- 1 tbsp olive oil
- Salt, to taste
Start by heating the olive oil in a large pot over medium heat. Add the onions and garlic and sauté until the onions are translucent, about 5 minutes. Add the celeriac and apples and stir to combine. Cook for another 5 minutes, stirring occasionally.
Add the vegetable broth, nutmeg, and black pepper to the pot and bring to a boil. Reduce heat and simmer for 20-25 minutes, or until the celeriac is tender.
Remove the pot from heat and let cool for a few minutes. Using an immersion blender, blend the soup until it is smooth and creamy. Add the milk and blend again until well combined.
Season with salt to taste and serve hot. Garnish with a dollop of sour cream or a sprinkle of chopped chives if desired.
