Ingredients:
- 1 package of tofu
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 onion, sliced
- 3 garlic cloves, minced
- 1 tablespoon ginger, grated
- 2 tablespoons soy sauce
- 2 tablespoons hoisin sauce
- 1 tablespoon sriracha sauce
- 1 tablespoon cornstarch
- 2 tablespoons vegetable oil
- 8 oz. noodles (udon or soba)
- Salt and pepper, to taste
Instructions:
- Press the tofu for at least 30 minutes to remove excess water.
- Cook the noodles according to the package instructions.
- While the tofu is pressing and noodles are cooking, heat up the vegetable oil in a wok or large skillet over medium-high heat.
- Add the sliced onions, minced garlic, and grated ginger. Cook until the onions are translucent.
- Add the sliced bell peppers and continue cooking for another 2-3 minutes.
