Ingredients:

  • 1 package of tofu
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 onion, sliced
  • 3 garlic cloves, minced
  • 1 tablespoon ginger, grated
  • 2 tablespoons soy sauce
  • 2 tablespoons hoisin sauce
  • 1 tablespoon sriracha sauce
  • 1 tablespoon cornstarch
  • 2 tablespoons vegetable oil
  • 8 oz. noodles (udon or soba)
  • Salt and pepper, to taste

Instructions:

  1. Press the tofu for at least 30 minutes to remove excess water.
  2. Cook the noodles according to the package instructions.
  3. While the tofu is pressing and noodles are cooking, heat up the vegetable oil in a wok or large skillet over medium-high heat.
  4. Add the sliced onions, minced garlic, and grated ginger. Cook until the onions are translucent.
  5. Add the sliced bell peppers and continue cooking for another 2-3 minutes.
  6. Cut the tofu into small cubes and add to the wok, stirring gently to avoid breaking up the tofu.
  7. In a small bowl, whisk together soy sauce, hoisin sauce, sriracha sauce, and cornstarch. Pour over the tofu and vegetables and stir gently to coat everything evenly.
  8. Continue cooking for another 2-3 minutes, until the sauce has thickened and the tofu and vegetables are heated through.
  9. Season with salt and pepper, to taste.
  10. Serve the stir-fry over the cooked noodles.
