Ingredients
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup unsalted butter, cold and cut into small pieces
- 1 cup diced ham
- 1 cup shredded cheddar cheese
- 1/2 cup buttermilk
- 1 large egg
Start by preheating your oven to 400°F (200°C). In a large bowl, whisk together the flour, baking powder, salt, and black pepper. Add the cold butter pieces and use a pastry cutter or your hands to cut the butter into the flour mixture until it resembles coarse crumbs.
Stir in the diced ham and shredded cheddar cheese. In a separate bowl, whisk together the buttermilk and egg. Add the wet ingredients to the dry ingredients and stir until just combined.
Transfer the dough to a floured surface and knead a few times until it comes together. Pat the dough into a circle that is about 1 inch thick. Cut the circle into 8 wedges and place them on a lined baking sheet. Brush the tops with a little extra buttermilk.
Bake the scones for 18-20 minutes or until they are golden brown on top. Serve warm and enjoy!
