If you're looking for a comforting and satisfying soup for a cold day, then this creamy chicken and leek soup recipe is perfect for you. Made with tender chicken, fresh leeks, and a touch of cream, this soup is easy to make and sure to warm you up.
Ingredients:
- 1 lb. boneless, skinless chicken breasts, cut into small pieces
- 2 tbsp. olive oil
- 2 leeks, sliced
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- 1 tsp. dried thyme
- Salt and pepper, to taste
Start by heating the olive oil in a large pot over medium heat. Add the chicken pieces and cook until browned on all sides, about 5 minutes. Remove the chicken from the pot and set aside.
Add the sliced leeks and minced garlic to the same pot and sauté until the leeks are tender, about 5 minutes. Pour in the chicken broth and bring to a boil. Reduce the heat and let simmer for 15 minutes.
Next, add the cooked chicken back into the pot along with the heavy cream and dried thyme. Stir to combine and let simmer for an additional 10 minutes. Season with salt and pepper to taste.
Once the soup is finished, ladle it into bowls and serve hot. You can also add some crusty bread on the side for dipping. Enjoy!
