If you're looking for a tasty and simple side dish that's perfect for any occasion, look no further than baked sweet potatoes with marshmallows. This recipe is easy to make and can be customized to suit your tastes, whether you prefer a classic and simple version or one with a little extra flair. Plus, with the added bonus of marshmallows, it's sure to be a crowd-pleaser with both kids and adults alike.

Ingredients:

  • 4 medium sweet potatoes
  • 1/2 cup brown sugar
  • 1/4 cup butter, softened
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1 cup mini marshmallows

To start, preheat your oven to 375 degrees F. While the oven is heating up, wash your sweet potatoes and pierce them all over with a fork. Place them on a baking sheet and bake for 45-50 minutes, or until they are tender when pierced with a fork.

Once the sweet potatoes are cooked, remove them from the oven and let them cool for a few minutes. While they are cooling, mix together the brown sugar, softened butter, cinnamon, nutmeg, and salt in a small bowl.

Once the sweet potatoes have cooled enough to handle, slice them open lengthwise and scoop out the flesh into a mixing bowl. Add the brown sugar mixture to the sweet potato flesh and mash together until well combined.

Transfer the mashed sweet potatoes back onto the baking sheet and sprinkle the mini marshmallows on top. Place the baking sheet back in the oven and bake for an additional 10-15 minutes, or until the marshmallows are melted and slightly golden.

Once the marshmallows are melted and golden, remove the baking sheet from the oven and let the sweet potatoes cool for a few minutes before serving. Enjoy!
