Ingredients:

  • 1 cup quinoa
  • 2 cups vegetable broth

  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 carrots, peeled and chopped
  • 2 celery stalks, chopped
  • 1 zucchini, chopped
  • 1 tsp. cumin
  • 1 tsp. paprika
  • 1 tsp. turmeric
  • 1/2 tsp. salt
  • 1/4 tsp. black pepper
  • 2 tbsp. olive oil

Start by rinsing the quinoa in a fine mesh strainer. In a large pot, heat the olive oil over medium-high heat. Add the onion and garlic and sauté until fragrant. Add the carrots, celery, and zucchini and continue to sauté until the vegetables start to soften.

Add the quinoa, vegetable broth, diced tomatoes, chickpeas, cumin, paprika, turmeric, salt, and pepper. Stir well to combine all the ingredients, and bring the mixture to a boil. Once boiling, reduce the heat and let the stew simmer for 25-30 minutes, or until the quinoa is fully cooked and the vegetables are tender.
