Ingredients:
- 1 pound of shrimp, peeled and deveined
- 1 tablespoon of olive oil
- 1 red bell pepper, sliced
- 1/4 cup of chopped fresh cilantro
- 1/4 cup of chopped green onions
- 1 tablespoon of freshly squeezed lime juice
- 1 tablespoon of soy sauce
- 1 tablespoon of honey
- 1 teaspoon of sriracha sauce
- 1 head of butter or bibb lettuce, washed and dried
Instructions:
- Heat the olive oil in a large skillet over medium-high heat.
- Add the shrimp and cook for 2-3 minutes on each side, or until they are pink and cooked through.
- Remove the shrimp from the skillet and set aside.
- Add the sliced bell pepper to the same skillet and sauté for 2-3 minutes.
- In a small bowl, whisk together the cilantro, green onions, lime juice, soy sauce, honey, and sriracha sauce.
- Add the cooked shrimp back to the skillet with the bell pepper and pour the sauce over the top.
- Stir until everything is coated in the sauce and heated through.
- To serve, spoon the shrimp mixture onto the lettuce leaves and wrap them up like a taco.
Tips:
- For an extra crunch, add chopped peanuts or cashews to the shrimp mixture before serving.
- If you prefer less spice, reduce the amount of sriracha sauce or leave it out altogether.
- You can also use other types of lettuce, such as romaine or iceberg, if you don't have butter or bibb lettuce on hand.
