Spicy Thai Shrimp Lettuce Wraps Recipe

Ingredients:

  • 1 pound of shrimp, peeled and deveined
  • 1 tablespoon of olive oil
  • 1 red bell pepper, sliced
  • 1/4 cup of chopped fresh cilantro
  • 1/4 cup of chopped green onions
  • 1 tablespoon of freshly squeezed lime juice
  • 1 tablespoon of soy sauce
  • 1 tablespoon of honey
  • 1 teaspoon of sriracha sauce
  • 1 head of butter or bibb lettuce, washed and dried

Instructions:

  1. Heat the olive oil in a large skillet over medium-high heat.
  2. Add the shrimp and cook for 2-3 minutes on each side, or until they are pink and cooked through.
  3. Remove the shrimp from the skillet and set aside.
  4. Add the sliced bell pepper to the same skillet and sauté for 2-3 minutes.
  5. In a small bowl, whisk together the cilantro, green onions, lime juice, soy sauce, honey, and sriracha sauce.
  6. Add the cooked shrimp back to the skillet with the bell pepper and pour the sauce over the top.
  7. Stir until everything is coated in the sauce and heated through.
  8. To serve, spoon the shrimp mixture onto the lettuce leaves and wrap them up like a taco.

Tips:

  • For an extra crunch, add chopped peanuts or cashews to the shrimp mixture before serving.
  • If you prefer less spice, reduce the amount of sriracha sauce or leave it out altogether.
  • You can also use other types of lettuce, such as romaine or iceberg, if you don't have butter or bibb lettuce on hand.
