Ingredients:
- 24 ladyfingers
- 6 egg yolks
- 3/4 cup white sugar
- 2/3 cup milk
- 1 1/4 cups heavy cream
- 1/2 teaspoon vanilla extract
- 1 pound mascarpone cheese
- 1/4 cup strong brewed espresso, cooled
- 1 tablespoon cocoa powder
Start by whisking together the egg yolks and sugar in a large mixing bowl. Add the milk and mix well. In a separate bowl, beat the heavy cream and vanilla extract until soft peaks form. Add the mascarpone cheese to the egg mixture and mix until smooth. Fold in the whipped cream mixture.
Dip the ladyfingers in the cooled espresso and line the bottom of a 9x13 inch baking dish. Pour half of the mascarpone mixture over the ladyfingers. Repeat with another layer of espresso-soaked ladyfingers and the remaining mascarpone mixture.
