Delicious Roasted Root Vegetable Salad with Honey Mustard Vinaigrette

Ingredients:

  • 3 cups mixed root vegetables (carrots, sweet potato, beetroot, parsnips, etc.)
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 3 cups mixed greens
  • 1/4 cup crumbled feta cheese
  • 1/4 cup toasted pecans
In a large mixing bowl, toss the root vegetables with olive oil, salt, and pepper. Spread the vegetables on a baking sheet and roast in the oven at 400°F for 20-25 minutes or until tender and golden brown.While the vegetables are roasting, wash and dry the mixed greens. Place them in a large salad bowl.Once the vegetables are done roasting, let them cool for a few minutes. Add them to the salad bowl with the mixed greens. Sprinkle crumbled feta cheese and toasted pecans on top.

Honey Mustard Vinaigrette:

  • 3 tbsp olive oil
  • 2 tbsp apple cider vinegar
  • 1 tbsp honey
  • 1 tbsp Dijon mustard
  • Salt and pepper to taste
In a small mixing bowl, whisk together olive oil, apple cider vinegar, honey, Dijon mustard, salt, and pepper. Drizzle the vinaigrette over the salad and toss well.
