Ingredients:
- 8 oz. whole wheat pasta
- 1 lb. fresh salmon fillet
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 small onion, sliced
- 4 cloves garlic, minced
- 2 tbsp. olive oil
- 1 tsp. red pepper flakes
- 1/2 cup chicken broth
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
First, cook the whole wheat pasta according to package instructions. While the pasta is cooking, season the salmon with salt and pepper and bake in the oven at 350°F for 15-20 minutes or until cooked through.
In a large skillet, heat the olive oil over medium-high heat. Add the sliced bell peppers and onion and sauté for 5-7 minutes or until tender. Add the minced garlic and red pepper flakes and cook for an additional minute.
Add the chicken broth to the skillet and bring to a boil. Reduce heat to low and let simmer for 5 minutes. Add the cooked pasta to the skillet and toss with the vegetables and broth. Flake the baked salmon and add it to the skillet. Toss everything together and cook for an additional 2-3 minutes or until heated through.
