Ingredients:
- 1 pound shrimp, peeled and deveined
- 1 pound sausage, sliced
- 1 green bell pepper, diced
- 1 red bell pepper, diced
- 1 yellow onion, diced
- 3 cloves garlic, minced
- 2 cups long-grain white rice
- 4 cups chicken broth
- 1 can diced tomatoes, drained
- 2 tablespoons Cajun seasoning
- 2 tablespoons olive oil
- Salt and pepper, to taste
To start, heat the olive oil in a large, heavy-bottomed skillet or Dutch oven over medium-high heat. Add the sausage and cook until browned, about 5 minutes. Remove the sausage from the pan and set aside.
In the same pan, add the onion, bell peppers, and garlic. Cook until the vegetables are soft and fragrant, about 5 minutes.
