Ingredients:

  • 4 ears of fresh corn
  • 4 slices of bacon, diced
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 2 cups of chicken broth
  • 1 cup of heavy cream
  • 1 tbsp of fresh thyme leaves
  • Salt and pepper, to taste

Start by shucking the corn and cutting off the kernels. Set aside the kernels and discard the cobs. In a large pot, cook the diced bacon over medium heat until crispy. Remove the bacon from the pot and set aside, leaving the bacon fat in the pot.

Add the diced onion and minced garlic to the pot and sauté until the onion is translucent. Add the corn kernels to the pot and sauté for a few minutes until slightly softened. Pour in the chicken broth and bring to a boil. Reduce the heat and let simmer for 10-15 minutes.

Using an immersion blender or transferring the soup to a blender, blend the soup until smooth. Return the soup to the pot and stir in the heavy cream and fresh thyme leaves. Season with salt and pepper to taste. Serve hot, topped with the crispy bacon.
