Ingredients:

  • 1 cup quinoa
  • 2 cups water
  • 2 tablespoons olive oil
  • 1 red bell pepper, sliced
  • 1 cup broccoli florets
  • 1 cup sliced carrots
  • 4 green onions, sliced
  • 2 cloves garlic, minced
  • 1/4 cup hoisin sauce
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon honey
  • 2 tablespoons sesame seeds

Instructions:

  1. Rinse quinoa in a fine mesh strainer and place in a medium saucepan with 2 cups of water. Bring to a boil, reduce heat to low, and simmer for 15-20 minutes or until water is absorbed and quinoa is tender.
  2. While quinoa is cooking, heat olive oil in a large skillet over medium-high heat. Add sliced bell pepper, broccoli, and carrots. Cook for 5-7 minutes or until vegetables are tender-crisp.
  3. Add sliced green onions and minced garlic to the skillet. Cook for 1-2 minutes or until garlic is fragrant.
  4. In a small bowl, whisk together hoisin sauce, soy sauce, rice vinegar, and honey.
  5. Add cooked quinoa to the skillet with the vegetables. Pour hoisin sauce mixture over the top and stir to combine.
  6. Sprinkle sesame seeds over the top of the stir-fry and serve.
