Ingredients:
- 1 jar grape leaves, drained and rinsed
- 1 cup uncooked white rice
- 1 small onion, chopped
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh dill, chopped
- 1/4 cup fresh mint, chopped
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- Salt and pepper to taste
- 1 cup water
- 1/2 cup plain Greek yogurt
- 1/4 cup chopped cucumber
- 1 garlic clove, minced
Directions:
- Preheat your oven to 375°F.
- In a bowl, mix the uncooked rice, chopped onion, parsley, dill, mint, olive oil, lemon juice, salt, and pepper. This will be the filling for the grape leaves.
- Take a grape leaf and lay it out on a flat surface with the rough side facing up.
- Place a spoonful of filling in the center of the leaf.
- Roll the leaf tightly around the filling, tucking in the sides as you go.
- Place the rolled grape leaf in a baking dish, seam-side down.
- Repeat the process with the remaining grape leaves and filling.
- Pour 1 cup of water over the grape leaves in the baking dish.
- Cover the dish with foil and bake for 45-50 minutes or until the rice is fully cooked.
- While the grape leaves are baking, prepare the tzatziki sauce. In a bowl, mix the Greek yogurt, chopped cucumber, minced garlic, and a pinch of salt.
- Remove the grape leaves from the oven and let them cool slightly.
- Serve the stuffed grape leaves with a dollop of tzatziki sauce on top.
Tips:
- Make sure to rinse the grape leaves thoroughly to remove any excess salt or brine.
- If you have any leftover filling, you can use it to stuff peppers or tomatoes.
- For a vegan version of this recipe, simply omit the Greek yogurt from the tzatziki sauce.
