Ingredients:

  • 1/4 cup of unsalted butter
  • 1 medium onion, chopped
  • 1/4 cup of all-purpose flour
  • 4 cups of chicken broth
  • 2 cups of corn kernels
  • 1 pound of crab meat, cooked and shredded
  • 1 cup of heavy cream
  • 1/4 cup of chopped fresh parsley
  • Salt and pepper to taste

Instructions:

  1. Melt the butter in a large pot over medium heat. Add the chopped onion and sauté until soft and translucent.
  2. Sprinkle the flour over the onions and stir until the mixture is smooth and bubbly.
  3. Gradually add the chicken broth, stirring constantly until the mixture thickens and comes to a boil.
  4. Add the corn kernels and crab meat, stirring to combine. Reduce heat and simmer for 10-15 minutes.
