Ingredients:
- 1/4 cup of unsalted butter
- 1 medium onion, chopped
- 1/4 cup of all-purpose flour
- 4 cups of chicken broth
- 2 cups of corn kernels
- 1 pound of crab meat, cooked and shredded
- 1 cup of heavy cream
- 1/4 cup of chopped fresh parsley
- Salt and pepper to taste
Instructions:
- Melt the butter in a large pot over medium heat. Add the chopped onion and sauté until soft and translucent.
- Sprinkle the flour over the onions and stir until the mixture is smooth and bubbly.
- Gradually add the chicken broth, stirring constantly until the mixture thickens and comes to a boil.
- Add the corn kernels and crab meat, stirring to combine. Reduce heat and simmer for 10-15 minutes.
- Stir in the heavy cream and chopped parsley, and season with salt and pepper to taste.
- Serve hot with crusty bread or oyster crackers.

- If fresh corn is not available, you can use frozen corn kernels.
