Ingredients:

  • 1 pound of cooked shrimp, peeled and deveined
  • 1 cup of fresh lime juice
  • 1/2 cup of chopped red onion
  • 1/2 cup of chopped tomato
  • 1/4 cup of chopped cilantro
  • 1 jalapeño pepper, seeded and finely chopped
  • 1 avocado, diced
  • Salt and pepper to taste

Begin by chopping the cooked shrimp into small pieces and placing them in a large bowl. Pour the lime juice over the shrimp, making sure that all of the pieces are covered. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes, or until the shrimp has turned pink and opaque.
