Ingredients:
- 1 lb. boneless, skinless chicken breasts, cooked and shredded
- 1 cup shredded cheddar cheese
- 1/2 cup diced tomatoes

- 2 tablespoons chopped cilantro

- 1/2 teaspoon chili powder
- 1/4 teaspoon garlic powder
- 12 small flour tortillas
- 2 tablespoons olive oil
Instructions:
- In a large bowl, combine the cooked shredded chicken, shredded cheddar cheese, diced tomatoes, diced onions, chopped cilantro, ground cumin, chili powder, and garlic powder. Mix well.
- Preheat a large skillet over medium heat.
- Brush one side of each tortilla with olive oil.
- Place one tortilla, oiled side down, in the skillet.

- Flip the quesadilla and cook for an additional 2-3 minutes, or until the other side is golden brown and the cheese is melted.
- Remove from heat and repeat with remaining tortillas and chicken mixture.
