- 1 zucchini, sliced into rounds
- 1 yellow squash, sliced into rounds
- 8-10 wooden skewers, soaked in water for 30 minutes
- 2 tablespoons olive oil

Begin by preheating your grill to medium-high heat. While the grill is heating up, prepare your vegetables. Cut the bell peppers and onion into large chunks, and slice the zucchini and yellow squash into rounds.
Thread the vegetables onto the skewers, alternating between the different types of vegetables. In a small bowl, whisk together the olive oil, balsamic vinegar, garlic powder, and salt and pepper to make the marinade.
Brush the marinade over the skewers, making sure to coat all of the vegetables evenly. Place the skewers on the grill, and cook for 8-10 minutes, turning occasionally, until the vegetables are tender and charred in spots.
Remove the skewers from the grill and serve hot. These Grilled Vegetable Skewers are a healthy and delicious side dish that pairs perfectly with any grilled meat or fish. Enjoy!
