Ingredients:
- 1 pound cooked and shredded chicken
- 1 cup shredded cheddar cheese

- 1 teaspoon chili powder
- 1/2 teaspoon salt

- 2 packages refrigerated pie crust
- 1 egg, beaten

Combine the chicken, cheese, onion, jalapeno, cilantro, cumin, chili powder, salt, and black pepper in a large bowl. Mix well.Roll out the pie crust on a floured surface and cut into circles using a biscuit cutter or a glass. Spoon a portion of the chicken mixture onto each circle of dough. Fold the dough over to create a half-moon shape and crimp the edges with a fork to seal.
Brush the tops of the empanadas with the beaten egg and bake in a preheated 375 degree oven for 15-20 minutes or until golden brown.Serve hot with salsa for dipping.
