Looking for a hearty and delicious soup? This creamy corn and bacon chowder is the perfect comfort food!
Ingredients:
- 6 slices of bacon, chopped
- 1 onion, diced
- 2 cloves garlic, minced
- 4 cups chicken broth
- 4 cups frozen corn
- 1 cup heavy cream
- 1 tsp dried thyme
- Salt and pepper to taste
Instructions:
- In a large pot, cook the bacon until crispy. Remove from pot and set aside.
- Add the onion and garlic to the pot and cook until softened.
- Pour in the chicken broth and bring to a boil.
- Add the frozen corn and thyme, and simmer for 10-15 minutes.
- Use an immersion blender to blend the soup until smooth.
- Stir in the heavy cream and season with salt and pepper to taste.
- Serve hot, topped with the crispy bacon.
Notes:
This recipe can easily be made vegetarian by omitting the bacon and using vegetable broth instead of chicken broth. For an extra kick, try adding some diced jalapeño to the soup. Enjoy!
