Ingredients:

  • 1 lb. Italian sausage, casings removed
  • 1 onion, diced
  • 2 carrots, peeled and chopped
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 1 tsp. dried basil
  • 1 tsp. dried oregano
  • 1 tsp. dried thyme
  • 1 bay leaf
  • 6 cups chicken or vegetable broth
  • 1 cup dried lentils
  • 1 can diced tomatoes
  • Salt and pepper, to taste

Instructions:

  1. In a large pot or Dutch oven, cook the Italian sausage over medium heat, breaking it up into small pieces as it cooks.
  2. Add the onion, carrots, and celery to the pot and cook until the vegetables are soft and the sausage is browned.
  3. Add the garlic, basil, oregano, thyme, and bay leaf to the pot and cook for another minute, until fragrant.
