Ingredients:
- 1 lb. Italian sausage, casings removed
- 1 onion, diced
- 2 carrots, peeled and chopped
- 2 celery stalks, chopped
- 3 cloves garlic, minced
- 1 tsp. dried basil
- 1 tsp. dried oregano
- 1 tsp. dried thyme
- 1 bay leaf
- 6 cups chicken or vegetable broth
- 1 cup dried lentils
- 1 can diced tomatoes
- Salt and pepper, to taste
Instructions:
- In a large pot or Dutch oven, cook the Italian sausage over medium heat, breaking it up into small pieces as it cooks.
- Add the onion, carrots, and celery to the pot and cook until the vegetables are soft and the sausage is browned.
- Add the garlic, basil, oregano, thyme, and bay leaf to the pot and cook for another minute, until fragrant.
