Ingredients:

  • 1 1/2 cups of farro grain
  • 4 cups of chicken or vegetable broth
  • 1/2 cup of white wine
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 8 oz of mushrooms, sliced
  • 1/2 cup of Parmesan cheese, grated
  • 2 tbsp of olive oil
  • 1 tbsp of fresh thyme, chopped
  • Salt and pepper to taste

Instructions:

  1. Heat the olive oil in a large saucepan over medium heat.
  2. Add the onion and garlic and sauté for 2-3 minutes until softened.
  3. Add the mushrooms and cook for an additional 3-4 minutes until softened and slightly browned.
  4. Add the farro and stir to coat in the oil and vegetables. Cook for 1-2 minutes.
  5. Add the white wine and stir until it is absorbed.
  6. Add the chicken or vegetable broth, one cup at a time, stirring constantly and allowing each cup of broth to be absorbed before adding the next.
  7. Continue adding broth and stirring for 30-35 minutes until the farro is cooked through and the risotto is thick and creamy.
  8. Stir in the Parmesan cheese, thyme, salt, and pepper.
  9. Transfer the risotto to serving dishes and serve hot.
