Ingredients:
- 1 1/2 cups of farro grain
- 4 cups of chicken or vegetable broth
- 1/2 cup of white wine
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 8 oz of mushrooms, sliced
- 1/2 cup of Parmesan cheese, grated
- 2 tbsp of olive oil
- 1 tbsp of fresh thyme, chopped
- Salt and pepper to taste
Instructions:
- Heat the olive oil in a large saucepan over medium heat.
- Add the onion and garlic and sauté for 2-3 minutes until softened.
- Add the mushrooms and cook for an additional 3-4 minutes until softened and slightly browned.
