Ingredients

  • 1 pound fettuccine pasta
  • 2 tablespoons olive oil
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 small onion, chopped
  • 2 garlic cloves, minced
  • 8 ounces mushrooms, sliced
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons chopped parsley

Instructions

  1. Bring a large pot of salted water to a boil. Add the fettuccine pasta and cook according to package instructions until al dente. Drain and set aside.
  2. While the pasta cooks, heat the olive oil in a large skillet over medium-high heat. Add the chicken, salt, and pepper and cook until browned and cooked through, about 8 minutes. Transfer the chicken to a plate and set aside.
  3. Add the onion and garlic to the same skillet and cook until softened, about 5 minutes. Add the mushrooms and cook until they release their moisture and begin to brown, about 5 minutes.
  4. Add the chicken broth to the skillet and bring to a simmer. Cook until the liquid reduces by half, about 5 minutes. Stir in the heavy cream and Parmesan cheese and cook until the sauce thickens, about 5 minutes.
  5. Return the chicken to the skillet and stir to combine with the sauce. Add the cooked fettuccine and toss to coat with the sauce. Garnish with chopped parsley before serving.

Tips

  • For a lighter version, you can use half-and-half instead of heavy cream.
  • To make the dish more spicy, add a pinch of red pepper flakes to the sauce.
  • This dish pairs well with a green salad or garlic bread.
