Grilled corn on the cob is a classic summer side dish that is both flavorful and easy to prepare. This recipe takes traditional grilled corn and elevates it with a mouthwatering blend of spices and a tangy lime butter. Plus, it's a vegetarian and gluten-free dish that everyone can enjoy!

Ingredients:

  • 4 ears of fresh corn, husks removed
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 4 tablespoons unsalted butter, at room temperature
  • 1 tablespoon fresh lime juice
  • 1/2 teaspoon lime zest

First, preheat your grill to medium-high heat. While the grill is heating up, brush each ear of corn with olive oil and sprinkle with smoked paprika, chili powder, garlic powder, and salt.

Place the seasoned corn on the grill and cook for 10-12 minutes, turning occasionally, until the kernels are tender and slightly charred. While the corn is grilling, prepare the lime butter by combining the room temperature butter, fresh lime juice, and lime zest in a small bowl.

Once the corn is finished grilling, remove from the heat and spread the lime butter generously over each ear. Serve immediately and enjoy!
