Ingredients:
- 1 large zucchini, sliced
- 1 large yellow squash, sliced
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 red onion, sliced
- 2 garlic cloves, minced
- 2 tbsp olive oil
- 1 tbsp lemon juice
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1 tsp dried oregano
- Salt and pepper to taste
Instructions:
- Preheat oven to 400°F.
- In a large mixing bowl, combine sliced zucchini, yellow squash, red and yellow bell pepper, and red onion.
- Add minced garlic, olive oil, lemon juice, dried thyme, rosemary, oregano, salt and pepper to the mixing bowl. Mix well.
