Ingredients:
- 1 lb. carrots, peeled and sliced into 1/4-inch rounds
- 2 cloves garlic, minced
- 1/4 cup parmesan cheese, grated
- 1/4 cup heavy cream
- 2 tbsp. olive oil
- 1 tsp. dried thyme
- Salt and pepper, to taste
Start by preheating your oven to 400°F. Then, in a bowl, toss the carrots with olive oil, garlic, thyme, salt, and pepper until well coated. Spread the carrots out in a single layer on a baking sheet and roast in the oven for 25-30 minutes, or until tender and lightly browned.
While the carrots are roasting, prepare the creamy garlic parmesan sauce. In a small saucepan, heat the heavy cream over medium heat until it begins to simmer. Reduce the heat to low and add the grated parmesan cheese, stirring until the cheese has melted and the sauce is smooth.
Once the carrots are done roasting, transfer them to a serving dish and pour the creamy garlic parmesan sauce over the top. Garnish with additional parmesan cheese and chopped fresh parsley, if desired. Serve hot and enjoy!
