Ingredients:

  • 1 lb. linguine pasta
  • 1 onion, diced
  • 4 cloves garlic, minced
  • 1 (14 oz.) can diced tomatoes
  • 1 tsp. dried basil
  • 1 tsp. dried oregano
  • 1/4 tsp. red pepper flakes
  • 4 cups vegetable broth
  • 2 cups water
  • 2 tbsp. olive oil
  • Salt and pepper, to taste
  • Fresh basil, chopped (optional)
  • Grated Parmesan cheese (optional)

Instructions:

1. In a large pot, heat olive oil over medium-high heat. Add onion and garlic and sauté for 3-5 minutes, or until onion is translucent.2. Add the canned tomatoes (including the juice), dried basil, dried oregano, and red pepper flakes to the pot. Stir to combine.3. Break the linguine pasta in half and add it to the pot. Add the vegetable broth and water to the pot and stir to combine.4. Bring the mixture to a boil and then reduce the heat to medium-low. Allow the pasta to simmer, stirring occasionally, for 15-20 minutes or until the pasta is cooked and most of the liquid has been absorbed.5. Season the pasta with salt and pepper, to taste. If desired, top with freshly chopped basil and grated Parmesan cheese.6. Serve hot and enjoy!
