Delicious Almond Biscotti Recipe

Ingredients

  • 1 1/2 cups of all-purpose flour
  • 1/2 cup of almond flour
  • 1 teaspoon of baking powder
  • 1/4 teaspoon of salt
  • 1/2 cup of unsalted butter, softened
  • 1/2 cup of granulated sugar
  • 2 large eggs
  • 1 teaspoon of vanilla extract
  • 1/2 cup of whole almonds, roughly chopped

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the all-purpose flour, almond flour, baking powder, and salt.
  3. In a separate large bowl, beat the butter and sugar together until creamy and smooth. Add in the eggs and vanilla extract, and mix until well combined.
  4. Gradually add in the dry ingredients and mix until just combined. Fold in the chopped almonds.
  5. Shape the dough into a long and narrow log shape on the prepared baking sheet. Bake for 25-30 minutes, or until lightly golden brown and firm to the touch.
  6. Remove from the oven and let cool for 5-10 minutes. Once cool enough to handle, use a sharp knife to cut the log into 1/2 inch thick slices.
  7. Place the sliced biscotti back onto the baking sheet and bake for another 10-15 minutes, or until golden and crispy.
  8. Remove from the oven and let cool completely on a wire rack.
