Ingredients:

  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 tablespoon olive oil
  • 1 tablespoon Cajun seasoning
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 8 ounces pasta, uncooked
  • 1 can (14.5 ounces) diced tomatoes, undrained
  • 1 can (10 ounces) condensed cream of chicken soup
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 1/2 cup shredded Parmesan cheese
  • Salt and pepper, to taste

Instructions:

  1. Heat olive oil in a large skillet over medium-high heat. Add chicken and Cajun seasoning, garlic powder, and onion powder. Cook until chicken is browned on all sides, about 5 minutes.
  2. Add uncooked pasta, diced tomatoes, cream of chicken soup, and chicken broth to the skillet. Stir until well combined.
  3. Bring mixture to a boil, then reduce heat to medium-low. Cover and simmer for 15-20 minutes, or until pasta is cooked through and sauce has thickened.
  4. Stir in heavy cream and Parmesan cheese until cheese is melted and sauce is creamy. Season with salt and pepper to taste.
  5. Serve hot and enjoy!

Tips:

  • For a spicier version, add more Cajun seasoning or red pepper flakes.
  • If you prefer a thinner sauce, add more chicken broth or heavy cream.
  • Garnish with fresh parsley and additional Parmesan cheese for extra flavor.
