Ingredients:
- 3 medium-sized beets, peeled and chopped
- 2 cups mixed greens
- 1/4 cup crumbled goat cheese
- 1/4 cup chopped walnuts
- 2 tbsp. olive oil
- 1 tbsp. balsamic vinegar
- 1 tsp. honey
- Salt and pepper, to taste
Instructions:
- Preheat your oven to 400°F (200°C).
