Ingredients:
- 1 pound ground beef
- 1 cup shredded cheddar cheese
- 1/2 cup diced onion
- 1/4 cup diced green bell pepper
- 1/4 cup diced red bell pepper
- 2 cloves garlic, minced
- 2 tablespoons tomato paste
- 1 tablespoon chili powder
- 1/2 teaspoon cumin
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 package refrigerated pie crusts
- 1 egg, beaten
Directions:
1. Preheat your oven to 375°F (190°C).2. In a large skillet over medium-high heat, cook the ground beef until browned and no longer pink. Drain the excess fat and transfer the beef to a large mixing bowl.3. Add the shredded cheddar cheese, diced onion, diced green and red bell pepper, minced garlic, tomato paste, chili powder, cumin, salt, and black pepper to the mixing bowl. Mix well until all ingredients are combined.4. Unroll the refrigerated pie crusts and cut out circles using a biscuit cutter or any round object with a diameter of about 3 inches.
5. Spoon a small amount of the beef and cheese mixture onto the center of each circle of dough.6. Fold the dough over the filling and use a fork to crimp the edges together.
7. Brush the beaten egg over the top of each empanada.8. Bake the empanadas in the preheated oven for 20 to 25 minutes, or until they are golden brown.9. Serve hot and enjoy!
