This cake is made with layers of chocolate sponge cake, whipped cream, and cherry filling. It is then topped with more whipped cream, chocolate shavings, and cherries. Ingredients:
- 2 cups all-purpose flour
- 2 cups granulated sugar
- 3/4 cup unsweetened cocoa powder
- 2 teaspoons baking powder
- 1 1/2 teaspoons baking soda
- 1 teaspoon salt
- 1 cup milk
- 1/2 cup vegetable oil
- 2 large eggs
- 2 teaspoons vanilla extract
- 1 cup boiling water
- 1 can cherry pie filling
- 2 cups heavy cream
- 1/4 cup powdered sugar
- Chocolate shavings and cherries for decoration
Start by preheating your oven to 350°F (180°C) and greasing two 9-inch round cake pans. In a large bowl, mix together flour, sugar, cocoa powder, baking powder, baking soda, and salt. Then add the milk, vegetable oil, eggs, and vanilla extract. Beat on medium speed for about 2 minutes. Stir in the boiling water, and mix until well combined.
Pour the cake batter evenly into the prepared cake pans. Bake for 30-35 minutes, or until a toothpick inserted into the center of the cake comes out clean. Let the cakes cool completely before frosting.
