Ingredients:

  • 1 cup of lentils, rinsed and drained
  • 1 small red onion, chopped
  • 1 red bell pepper, diced
  • 1 cucumber, diced
  • 1/4 cup of chopped fresh parsley
  • 1/4 cup of chopped fresh mint
  • 2 tablespoons of olive oil
  • 2 tablespoons of lemon juice
  • Salt and pepper to taste

Start by cooking the lentils in a pot of boiling water for about 20-25 minutes, or until they become tender but still hold their shape. Drain the lentils and let them cool down for a few minutes.

In a large bowl, combine the cooked lentils, chopped red onion, diced red bell pepper, and diced cucumber. Add the chopped parsley and mint, and mix well.

In a small bowl, whisk together the olive oil and lemon juice. Pour the dressing over the salad and toss gently to coat. Season with salt and pepper to taste.
