Ingredients:
- 1 large red bell pepper, sliced
- 1 large yellow bell pepper, sliced
- 1 medium zucchini, sliced lengthwise
- 1 medium eggplant, sliced into rounds
- 4 slices of bread (sourdough or ciabatta work great)
- 4 slices of mozzarella cheese
- 1/4 cup of pesto
- 2 tbsp of olive oil
- Salt and pepper to taste
Directions:
- Preheat your grill or grill pan to medium-high heat.
- Toss the sliced vegetables in olive oil, salt, and pepper.
- Grill the vegetables until they are tender and slightly charred, about 5-7 minutes per side.
- Spread pesto on one side of each slice of bread.
- Place a slice of mozzarella cheese on the other side of the bread.
