Ingredients:

  • 1 large red bell pepper, sliced
  • 1 large yellow bell pepper, sliced
  • 1 medium zucchini, sliced lengthwise
  • 1 medium eggplant, sliced into rounds
  • 4 slices of bread (sourdough or ciabatta work great)
  • 4 slices of mozzarella cheese
  • 1/4 cup of pesto
  • 2 tbsp of olive oil
  • Salt and pepper to taste

Directions:

  1. Preheat your grill or grill pan to medium-high heat.
  2. Toss the sliced vegetables in olive oil, salt, and pepper.
  3. Grill the vegetables until they are tender and slightly charred, about 5-7 minutes per side.
  4. Spread pesto on one side of each slice of bread.
  5. Place a slice of mozzarella cheese on the other side of the bread.
  6. Add the grilled vegetables to one side of the bread.
  7. Close the sandwich with the other slice of bread.
  8. Grill the sandwich on both sides until the bread is crispy and the cheese is melted, about 3-4 minutes per side.
