Decadent Chocolate Eclairs Recipe

Ingredients:

  • 1 cup water
  • 1/2 cup unsalted butter
  • 1/4 teaspoon salt
  • 1 cup all-purpose flour
  • 4 eggs
  • 1 1/2 cups heavy cream
  • 1/2 cup granulated sugar
  • 1/4 cup cornstarch
  • 1/4 teaspoon salt
  • 4 egg yolks
  • 1/4 cup unsalted butter
  • 1 teaspoon vanilla extract
  • 8 ounces dark chocolate, chopped

Instructions:

  1. Preheat your oven to 400°F.
  2. In a saucepan, bring the water, butter, and salt to a boil.
  3. Reduce the heat to low and add the flour, stirring constantly until the mixture forms a ball.
  4. Remove the saucepan from the heat and add the eggs one at a time, stirring well after each addition.
  5. Transfer the mixture to a pastry bag and pipe it onto a baking sheet in the shape of eclairs.
  6. Bake for 25-30 minutes or until golden brown. Let cool.
  7. In a saucepan, heat the heavy cream until it starts to steam.
  8. In a separate bowl, whisk together the sugar, cornstarch, salt, and egg yolks.
  9. Add the egg yolk mixture to the heavy cream and whisk until it thickens.
  10. Remove the saucepan from the heat and add the butter, vanilla extract, and chopped chocolate. Mix until the chocolate is completely melted and the mixture is smooth.
  11. Cut the cooled eclairs in half and pipe the chocolate custard in the middle.

Tips:

  • Make sure to pipe the eclairs evenly to ensure they bake evenly.
  • If the chocolate custard is too thick, add a little more heavy cream to thin it out.
