Ingredients:
- 1 pound of thin noodles (fideo)
- 1 onion, finely chopped
- 4 garlic cloves, minced
- 1 red pepper, chopped
- 1 green pepper, chopped
- 1 tomato, grated
- 1/2 teaspoon of saffron threads
- 1 pound of mixed seafood (shrimp, mussels, clams)
- 4 cups of seafood broth
- 2 tablespoons of olive oil
- Salt and pepper to taste
Instructions:
- Heat olive oil in a large skillet over medium heat. Add the chopped onion, garlic, red pepper, and green pepper. Sauté until the vegetables are tender, about 5-7 minutes.
- Add the grated tomato to the skillet and cook for another 5 minutes, stirring occasionally until the mixture becomes a sauce-like consistency.
