Ingredients:

  • 1 pound of thin noodles (fideo)
  • 1 onion, finely chopped
  • 4 garlic cloves, minced
  • 1 red pepper, chopped
  • 1 green pepper, chopped
  • 1 tomato, grated
  • 1/2 teaspoon of saffron threads
  • 1 pound of mixed seafood (shrimp, mussels, clams)
  • 4 cups of seafood broth
  • 2 tablespoons of olive oil
  • Salt and pepper to taste

Instructions:

  1. Heat olive oil in a large skillet over medium heat. Add the chopped onion, garlic, red pepper, and green pepper. Sauté until the vegetables are tender, about 5-7 minutes.
  2. Add the grated tomato to the skillet and cook for another 5 minutes, stirring occasionally until the mixture becomes a sauce-like consistency.
  3. Add the saffron threads and seafood broth to the skillet and bring to a boil.
  4. Add the thin noodles to the skillet and stir to combine. Cook for 10-12 minutes or until the noodles are tender and have absorbed most of the broth.
  5. Add the mixed seafood to the skillet and cook for an additional 5-7 minutes or until the seafood is fully cooked.
  6. Season with salt and pepper to taste.
  7. Serve hot with a sprinkle of freshly chopped parsley on top.
