Ingredients:
- 1 pound dried split peas
- 1 onion, chopped
- 2 carrots, peeled and chopped
- 2 celery stalks, chopped
- 2 garlic cloves, minced
- 6 cups chicken or vegetable broth
- 1 ham bone or 1 pound of chopped ham
- 1 bay leaf
- 1 teaspoon dried thyme
- Salt and pepper to taste
Instructions:
- Rinse the split peas and set them aside.
- In a large pot, sauté the onion, carrots, celery, and garlic over medium heat until softened.
- Add the split peas, broth, ham bone or chopped ham, bay leaf, and thyme to the pot.
