Hearty Split Pea Soup Recipe with Ham and Vegetables

Ingredients:

  • 1 pound dried split peas
  • 1 onion, chopped
  • 2 carrots, peeled and chopped
  • 2 celery stalks, chopped
  • 2 garlic cloves, minced
  • 6 cups chicken or vegetable broth
  • 1 ham bone or 1 pound of chopped ham
  • 1 bay leaf
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Instructions:

  1. Rinse the split peas and set them aside.
  2. In a large pot, sauté the onion, carrots, celery, and garlic over medium heat until softened.
  3. Add the split peas, broth, ham bone or chopped ham, bay leaf, and thyme to the pot.
  4. Bring the soup to a boil, then reduce the heat and simmer for 1-2 hours, stirring occasionally, until the peas are tender and the soup is thickened.
  5. Remove the ham bone and bay leaf from the soup and discard them.
  6. Using an immersion blender or a regular blender, puree the soup until it is smooth and creamy.
  7. Season with salt and pepper to taste.
