Ingredients:
- 1 pound of dried red beans, rinsed and sorted
- 1 pound of smoked sausage, sliced
- 1 large onion, chopped
- 1 green pepper, chopped
- 2 celery stalks, chopped
- 4 garlic cloves, minced
- 1 tablespoon of Cajun seasoning
- 1 teaspoon of dried thyme
- 1 teaspoon of dried oregano
- 1 bay leaf
- 6 cups of chicken broth
- 3 cups of cooked rice
- Green onions, chopped (for garnish)
Instructions:
- Place the rinsed and sorted red beans in a large pot and cover with water. Bring to a boil and let boil for 2 minutes. Remove from heat and let sit for 1 hour. Drain and rinse the beans.
- In a large Dutch oven or pot, cook the smoked sausage over medium-high heat until browned. Remove the sausage from the pot and set aside.
- Add the onion, green pepper, and celery to the pot and cook until softened, about 5 minutes. Add the minced garlic and cook for an additional minute.
- Add the Cajun seasoning, dried thyme, dried oregano, and bay leaf to the pot and stir to combine.
- Add the drained red beans and chicken broth to the pot and stir to combine. Bring to a boil and then reduce heat to low. Cover the pot and let simmer for 1 1/2 hours or until the beans are tender.
- Remove the bay leaf and stir in the cooked smoked sausage.
- Serve the red beans and sausage over cooked rice and garnish with chopped green onions.
