Delicious Red Beans and Rice with Smoked Sausage and Cajun Seasoning Recipe

Ingredients:

  • 1 pound of dried red beans, rinsed and sorted
  • 1 pound of smoked sausage, sliced
  • 1 large onion, chopped
  • 1 green pepper, chopped
  • 2 celery stalks, chopped
  • 4 garlic cloves, minced
  • 1 tablespoon of Cajun seasoning
  • 1 teaspoon of dried thyme
  • 1 teaspoon of dried oregano
  • 1 bay leaf
  • 6 cups of chicken broth
  • 3 cups of cooked rice
  • Green onions, chopped (for garnish)

Instructions:

  1. Place the rinsed and sorted red beans in a large pot and cover with water. Bring to a boil and let boil for 2 minutes. Remove from heat and let sit for 1 hour. Drain and rinse the beans.
  2. In a large Dutch oven or pot, cook the smoked sausage over medium-high heat until browned. Remove the sausage from the pot and set aside.
  3. Add the onion, green pepper, and celery to the pot and cook until softened, about 5 minutes. Add the minced garlic and cook for an additional minute.
  4. Add the Cajun seasoning, dried thyme, dried oregano, and bay leaf to the pot and stir to combine.
  5. Add the drained red beans and chicken broth to the pot and stir to combine. Bring to a boil and then reduce heat to low. Cover the pot and let simmer for 1 1/2 hours or until the beans are tender.
  6. Remove the bay leaf and stir in the cooked smoked sausage.
  7. Serve the red beans and sausage over cooked rice and garnish with chopped green onions.
