Ingredients:
- 1 pound of chicken breast, cooked and shredded
- 1 can of black beans, drained and rinsed
- 1 can of corn, drained
- 1 cup of salsa
- 1 cup of shredded cheddar cheese
- 8-10 flour tortillas
- 1 tbsp of olive oil
- 1 tbsp of chili powder
- 1 tsp of garlic powder
- Salt and pepper to taste
Instructions:
- Preheat the oven to 375°F.
- In a large bowl, mix together the cooked and shredded chicken breast, black beans, corn, salsa, olive oil, chili powder, garlic powder, salt, and pepper.
- Place a spoonful of the mixture onto a flour tortilla and roll it up tightly. Repeat with the remaining tortillas and mixture.
- Place the rolled-up tortillas seam-side down in a baking dish. Top with more shredded cheddar cheese.
