Ingredients:
- 1 pound lean ground turkey
- 1/2 cup whole wheat bread crumbs
- 1/4 cup grated Parmesan cheese
- 1/4 cup chopped fresh parsley
- 1 egg, lightly beaten
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 8 cups chicken broth
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 teaspoon Italian seasoning
- 1 cup whole grain pasta
- 4 cups fresh spinach
Instructions:
- In a large mixing bowl, combine the ground turkey, bread crumbs, Parmesan cheese, parsley, egg, garlic powder, onion powder, salt, and black pepper. Mix well and shape into small meatballs.
- In a large pot, heat the chicken broth over medium heat. Add the chopped onion, garlic, and Italian seasoning. Bring to a boil and then reduce heat to low.
- Add the meatballs to the pot and simmer for 15-20 minutes, until cooked through.
- In a separate pot, cook the pasta according to package directions. Drain and set aside.
- Add the cooked pasta and spinach to the pot with the meatballs and broth. Simmer for an additional 5 minutes, until the spinach is wilted.
- Serve hot and enjoy!
