Italian Wedding Soup with Turkey Meatballs

Ingredients:

  • 1 pound lean ground turkey
  • 1/2 cup whole wheat bread crumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 1 egg, lightly beaten
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 8 cups chicken broth
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1 cup whole grain pasta
  • 4 cups fresh spinach

Instructions:

  1. In a large mixing bowl, combine the ground turkey, bread crumbs, Parmesan cheese, parsley, egg, garlic powder, onion powder, salt, and black pepper. Mix well and shape into small meatballs.
  2. In a large pot, heat the chicken broth over medium heat. Add the chopped onion, garlic, and Italian seasoning. Bring to a boil and then reduce heat to low.
  3. Add the meatballs to the pot and simmer for 15-20 minutes, until cooked through.
  4. In a separate pot, cook the pasta according to package directions. Drain and set aside.
  5. Add the cooked pasta and spinach to the pot with the meatballs and broth. Simmer for an additional 5 minutes, until the spinach is wilted.
  6. Serve hot and enjoy!
