Creamy Chicken and Mushroom Soup Recipe

Ingredients:

  • 1 pound boneless, skinless chicken breasts, cut into small pieces
  • 8 oz. sliced mushrooms
  • 1/2 cup chopped onion
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 tbsp all-purpose flour
  • 1 tbsp olive oil
  • 1 tsp dried thyme leaves
  • 1 tsp dried rosemary leaves
  • Salt and pepper to taste

Instructions:

  1. Heat the olive oil in a large pot over medium heat. Add the chicken and cook until browned on all sides. Remove the chicken from the pot and set aside.
  2. Add the mushrooms, onion, and garlic to the pot and cook until the vegetables are tender, about 5 minutes.
  3. Sprinkle the flour over the vegetables and stir until they are coated.
  4. Add the chicken broth, thyme, and rosemary to the pot and stir to combine.
  5. Return the chicken to the pot and bring the soup to a boil.
  6. Reduce the heat to low and simmer for 15-20 minutes, or until the chicken is cooked through.
  7. Stir in the heavy cream and continue to simmer for an additional 5 minutes.
  8. Add salt and pepper to taste.
  9. Serve hot and enjoy!
