Ingredients:
- 1 pound boneless, skinless chicken breasts, cut into small pieces
- 8 oz. sliced mushrooms
- 1/2 cup chopped onion
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- 2 tbsp all-purpose flour
- 1 tbsp olive oil
- 1 tsp dried thyme leaves
- 1 tsp dried rosemary leaves
- Salt and pepper to taste
Instructions:
- Heat the olive oil in a large pot over medium heat. Add the chicken and cook until browned on all sides. Remove the chicken from the pot and set aside.
- Add the mushrooms, onion, and garlic to the pot and cook until the vegetables are tender, about 5 minutes.
- Sprinkle the flour over the vegetables and stir until they are coated.
- Add the chicken broth, thyme, and rosemary to the pot and stir to combine.
- Return the chicken to the pot and bring the soup to a boil.
