Ingredients:

  • 1 lb. large shrimp, peeled and deveined
  • 1 cup stone-ground grits
  • 4 cups water or chicken broth
  • 1/2 cup heavy cream
  • 1/2 cup grated cheddar cheese
  • 1/4 cup butter
  • 2 cloves garlic, minced
  • 1/2 onion, chopped
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 2 tbsp. Cajun seasoning blend
  • 2 tbsp. olive oil
  • Salt and pepper to taste

Instructions:

1. In a large pot, bring the water or chicken broth to a boil. Slowly add the grits, stirring constantly.2. Reduce the heat to low and simmer for 20-25 minutes, stirring occasionally, until the grits are thick and creamy.3. Stir in the heavy cream, grated cheddar cheese, and butter until fully incorporated. Season with salt and pepper to taste.4. In a separate pan, heat the olive oil over medium-high heat. Add the garlic, onion, and bell peppers and sauté until the vegetables are tender, about 5-7 minutes.5. Add the Cajun seasoning blend to the pan and stir until the vegetables are fully coated.6. Add the shrimp to the pan and cook for 2-3 minutes on each side, until pink and cooked through.7. Serve the shrimp and vegetables over a bed of the creamy grits. Garnish with additional Cajun seasoning and chopped parsley, if desired.
