Ingredients:
- 1 pound boneless, skinless chicken breasts, cut into thin strips
- 1/4 cup soy sauce
- 1/4 cup honey
- 1/4 cup vegetable oil
- 1 tablespoon curry powder
- 1 teaspoon ground cumin
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon cayenne pepper
- 1/2 cup creamy peanut butter
- 1/4 cup soy sauce
- 1/4 cup honey
- 1/4 cup rice vinegar
- 2 cloves garlic, minced
- 1/4 teaspoon red pepper flakes
- 1/4 cup water
Marinate the chicken strips in a mixture of soy sauce, honey, vegetable oil, curry powder, cumin, garlic powder, salt, and cayenne pepper for at least 2 hours or overnight.
Thread the chicken strips onto skewers and grill until cooked through, about 3-4 minutes per side.
To make the peanut dipping sauce, whisk together peanut butter, soy sauce, honey, rice vinegar, minced garlic, and red pepper flakes. Add water until desired consistency is reached.
Serve the chicken satay skewers with the peanut dipping sauce on the side. Enjoy!
