Ingredients:
- 1 pound of boneless chicken breast, cut into small pieces
- 1/4 cup soy sauce
- 2 tablespoons honey
- 1 tablespoon curry powder
- 1 tablespoon minced garlic
- 1/4 teaspoon black pepper
- 1/4 cup peanut oil
- Wooden skewers, soaked in water for 30 minutes
Instructions:
- In a bowl, mix together soy sauce, honey, curry powder, minced garlic, black pepper, and peanut oil to make the marinade.
- Add the chicken pieces to the marinade, and mix well to coat. Cover and refrigerate for at least 2 hours or overnight.
- Preheat the grill or grill pan to medium-high heat.
- Thread the chicken onto the wooden skewers, and grill for 6-8 minutes on each side, or until fully cooked.
- Serve hot with peanut sauce and enjoy!
Peanut Sauce Recipe:
- 1 cup creamy peanut butter
- 1/4 cup soy sauce
- 2 tablespoons honey
- 1 tablespoon minced garlic
- 1/4 teaspoon black pepper
- 1/4 cup water
- 1 tablespoon lime juice
Instructions:
- In a small saucepan, mix together peanut butter, soy sauce, honey, minced garlic, black pepper, and water over medium heat.
- Stir well until the mixture is smooth and heated through, about 5 minutes.
- Remove from heat, and stir in lime juice. Let cool to room temperature before serving.
